‘Reinventing what a restaurant can be’

A tridimensional experience, that was a phrase that we kept mentioning during our last experience at Alinea. This went far beyond the food which was delicious and perfectly excecuted. And the hospitality which was warm and anticipatory, filled with small touches of magic all night long.

There are elements of sensory exploration along the menu that naturally fits more than ever before. The element of surprise and nostalgia are very well present, already a mark of Grant’s style. Senses of smell, sight, sound, touch, are all involved in the experience. A citrus bowl releasing aromas, dining in the dark, fire centerpiece, music pairings, fog machines, choreographed platings, I can keep going on and on about all the elements that makes this experience so unique in the world.

Alinea is not comfortable enough just by making delicious food. They are thinking on ways how this can be taken to a truly completely new level of dining experience and that is why they compete only with themselves.

Next restaurant second part of the Alinea sequence came with plenty more surprises. The experience is packed with unexpected moments that showcase the emotional approach Grant Achatz had at that moment in time as well as it is possible to see all the connection and evolution of his cuisine through the years.

Hidden items in the center of the table, floating garnishes, edible centerpieces, a pork belly being cooked in front of you without realizing it, unique plate-ware, and a dessert plated directly on the table are some things you will experience in this menu.

This menu was a reminder of how far ahead Grant Achatz and his team were in that period of time. And most importantly that they keep pushing to find new ways to discover what a restaurant can be.

Next: Alinea 2011-2015 is a masterpiece.

Get ready to lose yourself in the stories of Gaggan and its team. Be ready to laugh 🤣, to sing 🎤, to dance 💃, to eat with you hands 🤲 and sometimes … even with no hands 👅.

Using science and modern techniques to tell the story of Indian 🇮🇳 cuisine in a new land 🇹🇭. In order to understand why this restaurant is so highly ranked 🏆 you first need to look in retrospective to the economic and social impact it has had in its environment. A restaurant sometimes is more than a three hour meal and there is no better example of this than here.

Noma is probably, currently, the restaurant that is pushing the envelope the most right now in the culinary world.

Their current ‘Game & Forest’ menu is as daring and seductive as it comes. Get ready to try and learn about new flavors and preparations you probably did not think were possible. Dishes are work of art and plenty of interaction with the food ahead of you.

Reindeer feast from the tongue to the heart with a sauce enhanced by citrus ants. One the best caviar dishes this year. Duck in ways I have never imagined. Duck feet for dessert. These and more are some of the wonderful surprises this menu has to offer.

Be ready to think and get out of your comfort zone. Bring an open mind, because Noma is daring to do things no one else is.

My first meal here was in 2015 and quickly became one of my top meals of the year. I discovered the Scandinavian elegance and precision with flavors and techniques that were executed to perfection.

The 20-plus course Universe menu changes with the seasons, but expect an exploration of Scandinavia’s superb wild and organic produce in delicate and beautifully presented forms

The super perfected classics remain as the ‘marbled hake’ and the ‘raizor clam’, while new additions as the ‘caviar & pumpkin’ or the ‘trout sequence’ reinforces that they keep looking for new ways to surprise & delight.

The international team is as friendly and professional as it gets. Go for the wine pairing from their grand award cellar led by @sorenledet or for the juice pairing which includes not only delicious but fun table-side concoctions.
